3 c. thinly sliced unpared zucchini (about 4 sm.)
1 c. Bisquick baking mix
1/2 c. onion, finely chopped
1/2 c. grated Parmesan cheese
2 tbsp. snipped parsley
1/2 tsp. salt
Dash of pepper
1/2 c. vegetable oil
4 eggs, slightly beaten
1 clove garlic, finely chopped

Heat oven to 350 degrees. Grease oblong pan 13 x 9 x 2 inches. Mix all ingredients. Spread in pan. Bake until golden brown, about 40 minutes. Cut into pieces 2 x 1 inch. Makes 4 dozen appetizers.
