CHRISTMAS BARLEY SOUP 
1/4 c. whole barley
1/2 c. celery, sliced
2 c. fresh tomatoes, diced
1 c. frozen peas
1 c. carrots, sliced
1/4 c. onion, chopped
Handful of parsley

Cook barley 1 hour in 6 cups of water. Add remaining ingredients and cook until tender. Add chopped parsley just before serving.
