BRAN-ANA-NUT MUFFINS 
1 1/4 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
1 1/2 c. All-Bran cereal
3/4 c. milk
1 egg
1/3 c. shortening or vegetable oil
1 c. mashed bananas
1/2 c. chopped walnuts

1. Stir together flour, baking powder, salt and sugar. Set aside.

2. Measure All-Bran cereal and milk into mixing bowl. Stir to combine. Let stand 1-2 minutes or until cereal is softened. Add egg, shortening, banana and walnuts. Beat well.

3. Add dry ingredients to cereal mixture, stirring only until combined. Portion batter into 12 greased 2 1/2 inch muffin cups.

4. Bake at 400 degrees about 25 minutes or until muffins are golden brown. Serve warm.
