CHICKEN SALAD 
2 env. Knox gelatin
1 1/3 c. water or chicken broth
2 cans cream of celery or cream of chicken soup
1 tsp. salt
2 tbsp. lemon juice
2 tsp. minced onion
1 c. salad dressing
2 c. diced celery
2 or 4 c. cooked chicken
2 tbsp. pimento, cut fine

Dissolve gelatin over low heat with chicken broth or water, stirring constantly. Remove from heat and add cream of celery or chicken soup, lemon juice, minced onion, salt and salad dressing. Beat with beater until smooth. Let set until wobbly, then add celery and chicken. Set until firm and serve on lettuce leaf.
