OATMEAL AND APPLE BUTTER BARS 
2 c. old-fashioned oats
1 c. all-purpose flour
3/4 c. sugar
1/4 tsp. salt
1/2 tsp. ground cinnamon
3/4 c. butter, softened
1 c. apple butter
Confectioners' sugar (opt.)

Preheat oven to 350 degrees. Lightly grease a 9" square baking pan.

In a large bowl, combine oats, flour, sugar, salt and cinnamon. Add the butter and beat with an electric mixer on low speed until mixture is crumbly.

Pat half of the mixture (about 2 cups) into the prepared baking pan.

Spread apple butter evenly over crumb layer. Sprinkle remaining crumbs over apple butter and press them down gently.

Bake for 30 to 35 minutes or until golden. Let cool in pan on a wire rack. Dust with confectioners' sugar, if desired. Cut into bars. Yield: 16 bars.
