ZUCCHINI BREAD | |
3 eggs 3 c. flour 2 c. sugar 1 c. oil 3 tsp. vanilla 1/4 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 2 c. peeled, seeded, grated zucchini 2 tsp. cinnamon 1 c. chopped nuts or 1 c. raisins or both (1/2 c. each) Beat eggs until light; add oil, sugar, zucchini, and vanilla. Mix lightly but well. Add sifted dry ingredients to wet mixture. Add nuts or raisins. Bake in 2 greased regular bread pan (325 degrees) for 1 hour. (Can be frozen.) |
