HAWAIIAN CAKE 
2 c. sugar
2 eggs
1 c. oil
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1 c. chopped pecans
1 c. crushed pineapple
3/4 c. grated coconut
1 tsp. vanilla

Blend sugar, eggs and oil until light and fluffy. Sift in dry ingredients and mix well. Stir in carrots, peaches, pineapple, coconut and vanilla. Pour into lightly greased and floured cake pan. Bake at 350 degrees for 55-60 minutes. This can be baked in tube pan or 8x13 inch bread pan.
