APRICOT CHEESE DELIGHT 
1 lg. orange or peach Jello
2 c. boiling water
1 lg. can apricots, chopped
1 lg. can crushed pineapple
1 c. miniature marshmallows

Mix Jello and water; dissolve. Drain apricots and pineapple; mix and save juices. Add 1 cup of saved juices to gelatin mixture; chill until thick. Add fruits and marshmallows; chill until firm.

TOPPING:

1/2 c. sugar
1 egg, beaten
3 tbsp. flour
1 tbsp. butter
1 c. cream, whipped or 2 c. Cool Whip
3/4 c. grated cheese

Mix sugar, egg, and flour with remaining juice; cools until thick. Add butter; cool. Fold in whipped cream; spread over cold gelatin mixture. Sprinkle with cheese.
