O.'S OYSTER STEW | |
2 tbsp. butter 2 tbsp. celery, chopped sm. 2 tbsp. onion, chopped sm. 1 qt. fresh, shucked oysters (clams can be substituted also) 1 qt. of warm (heated) milk 1 tbsp. Worcestershire sauce 1 tsp. salt 1/2 tsp. cayenne pepper Paprika 1. Melt the butter and add the celery and onions. Cook until tender. 2. Rinse and drain the oysters (or clams) and add them the butter mixture. Cook them slowly until the edges curl slightly. 3. Add the milk and the Worcestershire sauce. Cook until the oysters are fully curled, be careful not to over cook them. 4. Add the salt and the cayenne pepper and serve not. 5. Place a small lump of butter in each bowl and add the mixture. 6. Garnish with paprika. |
