PUMPKIN PIE 
1 env. Knox gelatin
1/4 c. cold water
1 1/4 c. pumpkin
1/2 c. milk
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. sugar
3 eggs
1 pie shell (baked)

To slightly beaten egg yolks add 1/2 cup sugar, pumpkin, milk, salt and spices. Cook until thick in a double boiler. Soften gelatin in cold water. Add to hot pumpkin mixture; mix thoroughly and cool. When it begins thicken fold in stiffly beaten egg whites to which the other 1/2 cup sugar ha been added. Pour into a previously baked pie shell. Chill thoroughly in the refrigerator.
