LEMON CHESS PIE 
2 c. sugar
1 tbsp. flour
1 tbsp. cornmeal
Pinch of salt
1/4 c. melted butter
1/4 c. milk
Juice & grated rind of 2 lemons
4 eggs, beaten
1 unbaked pie shell

Combine sugar, flour, cornmeal and salt; mix well. Add butter and milk. Mix; add lemon juice and rind and eggs. Beat well. Broil unbaked pie shell 1 minute. Remove from oven and pour in filling. Bake at 350 degrees for 30-35 minutes or until slightly firm in center. Makes one 9 inch pie.
