BUTTERMILK WAFFLES 
2 c. sifted all-purpose flour
1 tsp. baking soda
3/4 tsp. salt
1 or 2 tbsp. sugar
2 tsp. baking powder
3 egg yolks, well beaten
2 c. buttermilk
1/3 c. melted butter, cooled
3 egg whites

Sift together flour, baking soda, salt, sugar, and baking powder. Combine egg yolks, buttermilk, and shortening. Blend thoroughly. Gradually add to sifted dry ingredients, beating constantly until smooth. Fold in stiffly beaten egg whites. Bake in preheated waffle iron until steaming ceases and waffle is golden brown. Serve at once. Makes 6 to 8 medium waffles.
