PORK CHOPS WITH YELLOW RICE 
6-8 pork chops
1 (5 oz.) pkg. saffron yellow rice
1 sm. onion, chopped
1/4 c. bell pepper
1/4 c. chopped celery
1 garlic
1/4 c. chopped green onions
Salt/pepper
Oil
Flour

C ook rice according to package directions. Meanwhile, season pork chops and lightly dust with flour. Brown on both sides (I use an electric skillet) in small amount of oil.

After all are browned, remove and add onions, peppers, celery, green onions and garlic. Saute in leftover oil until tender. Then, add cooked rice and stir fry for about 5 minutes on high. Turn down to simmer and place pork chops in rice and cover for about 30-40 minutes. Continue to stir rice to prevent sticking.

I have made this recipe many, many times, my husband and I love it! Sometimes I add frozen mixed vegetables instead of the celery.
