BROCCOLI CASSEROLE 
2 (10 oz.) pkgs. frozen, cut broccoli (I also use broccoli and cauliflower)
1 stick butter
1/2 lb. Velveeta cheese
1 column Ritz crackers, crumbled

Cook broccoli according to package directions. Drain broccoli and place in a 9x11 casserole dish. Melt 1/2 stick butter; add Velveeta cheese and heat until cheese melts. Pour over broccoli. Melt remaining 1/2 stick butter and mix with crumbled crackers. Sprinkle on top of casserole and bake at 350 degrees for 20 to 30 minutes. Serves 6.
