CHICKEN CASSEROLE WITH BROCCOLI 
Whole chicken, cooked with meat removed
1 box broccoli
1 box cauliflower
1 tbsp. butter
1/2 lb. Velveeta cheese
1 can cream of chicken soup
1/2 c. mayonnaise
1 c. cooked rice

Cook and drain broccoli and cauliflower. Melt butter, cheese and soup together. Add mayonnaise. Place chicken, broccoli, cauliflower and rice in a casserole dish.

Pour soup mixture over chicken. Bake at 400 degrees for 25 minutes. Chicken broth may be added if mixture is too dry.
