MIXED VEGETABLE CASSEROLE 
1 lg. pkg. (1 lb.) frozen mixed vegetables or 2 cans mixed vegetables, uncooked and drained
1 c. grated Cheddar cheese
1 c. mayonnaise
1 c. chopped celery
1 med. onion, chopped
1 stick butter
1 tube crackers, crumbled

Cook frozen vegetables as directed on package and drain. Put in greased casserole dish. Mix onion, celery, cheese and mayonnaise, spread over vegetables. Melt butter, mix with cracker crumbs and sprinkle over top. Bake 30 minutes at 350 degrees. Serves 6-8.
