MIXED VEGETABLE CASSEROLE 
1 lg. pkg. frozen mixed vegetables (or fresh vegetables)
1 c. diced celery
1 c. onion, finely chopped
1 c. cheddar cheese, shredded
1 c. mayonnaise
1 1/2 c. Ritz crackers, rolled fine
1 stick butter, melted

Cook vegetables according to recipe on package. Drain, set aside. Mix celery, onions, cheese and mayonnaise. Add vegetables and mix well. Pour into a buttered casserole dish. Top with cracker crumbs and drizzle butter over crackers. Cook at 350 degrees for 30 minutes or 325 degrees if your oven is hotter than normal. Recipe can be halved.

This recipe could be used as a main dish. All you would need with it would be some nice home cooked bread and a beverage. I got the recipe from a friend of my mother's who brought it to the beach when I had my mother and some of her friends visit me.
