SOUVLAKIA 
5 lb. lamb, beef or pork, cut into 1 1/2: cubes

MARINADE:

1 olive oil
Juice of 1 lime
2 garlic cloves, chopped
2 tsp. oregano
1/2 tsp. thyme
1/2 c. lemon juice
1/2 c. wine
2 tsp. salt
2 bay leaves
1/2 tsp. pepper
1/2 c. water

Place meat cubes in a large glass or enamel pan. Make marinade by combining all ingredients. Pour marinade over meat. Cover tightly and refrigerate overnight. Turning occasionally. Place on individual skewers. Broil kebabs 4 inches from heat 12-15 minutes or until browned. Turn and brush with marinade.
