VIDALIA ONION PIE 
4 medium thinly sliced Vidalia onions
1/2 stick butter
3 eggs, beaten
1/4 tsp. salt
1 c. sour cream
1/2 tsp. pepper
Dash of Tabasco
1 pie shell, unbaked
Grated Parmesan cheese

Saute' onions in butter. Combine eggs and sour cream and add to onion mixture. Season and pour into pie shell, then sprinkle with cheese. Bake at 450 degrees for 20 minutes. Then at 325 degrees for 20 minutes. Serves 6.
