CHICKEN POT PIE 
1 c. chopped onion
1 c. chopped celery
1 c. chopped carrots
1/3 c. butter (butter)
1/2 c. flour
2 c. chicken broth
1 c. half & half
4-6 pieces chicken breast
1 tsp. salt
1/4 tsp. pepper
Double pastry recipe

Saute onion, celery, and carrots in butter for 10 minutes. Add flour; stir until smooth. Add broth and half & half. Cook until bubbly and thickened. Add salt, pepper, and chicken (broken into small pieces). Pour into favorite pastry shell in 11 x 8 inch dish. Cover in pastry. Bake at 400 degrees for 40 minutes.
