POTATO CANDY 
1 boiled potato
Powdered sugar
Peanut butter

Peel and boil potato until done. Let it get cold. In large bowl take about 1/4 of potato and mash with fork. Start adding sugar until mixture is able to be rolled out to a rectangle. If necessary add more potato or sugar whichever is needed. Then roll the mixture on a board sprinkled with the sugar. After it is rolled to about 1/8 inch thick spread with peanut butter and roll it up carefully like a jelly roll. Put on a flat plate or cookie sheet and refrigerate until it is able to slice, about 2 hours or so.
