BROCCOLI - FLOUNDER ROLLS | |
4 flounder filets 1 1/2 c. loose-pack broccoli cuts 1/2 c. fresh mushrooms, sliced 2 tbsp. grated Parmesan cheese 1 tbsp. diced pimento 1/2 tsp. lemon peel, finely shredded 1/4 tsp. onion powder 1/4 tsp. lemon pepper Paprika Stuffing: Place broccoli in colander and run cold water over until thawed. Drain. Chop broccoli. In medium bowl combine the broccoli, mushrooms, Parmesan, pimento, lemon peel, onion powder and lemon pepper. Preheat oven to 375 degrees. Place 1/2 cup stuffing on each fillet. Roll fish up and secure with toothpicks. Place rolls on 8 x 8 x 2 inch dish. Cover with foil. Bake 20 minutes until fish flakes when tested with a fork. Sprinkle with paprika. 134 calories each, 2 grams fat, 153 milligrams sodium. |
