BOLOGNA 
4 lbs. hamburger
1/4 c. tender quick - less 1 tbsp.

Mix well, let stand overnight in refrigerator. Next morning add:

1/2 c. brown sugar
2 tbsp. natural hickory liquid smoke
1 1/2 tsp. pepper
2 tbsp. mustard seed
1/2 tbsp. garlic salt (optional)

Mix all together, make 4 rolls. Bake 2 hours at 250 degrees, turn every half hour.

2 tbsp. hot peppers, crushed
3 tbsp. for extra hot
