CARROT COOKIES 
1 c. shortening (part soft butter)
3/4 c. sugar
2 eggs
1 c. mashed, cooked carrots
2 tsp. baking powder
1/2 tsp. salt
2 c. flour
3/4 c. shredded coconut

ORANGE BUTTER ICING:

3 tbsp. soft butter
1 1/2 c. powdered sugar
2 tsp. grated orange peel
About 1 tbsp. orange juice

Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop by teaspoonfuls about 2" apart onto lightly greased baking sheet. Bake at 350 degrees for 8 to 10 minutes. Immediately remove from baking sheet. When cool, frost with icing.
