ZUCCHINI CASSEROLE 
3 c. unpeeled cut zucchini, cook, drain
2 carrots, shredded
1 onion, grated
1 can undiluted cream of chicken soup
1/2 c. sour cream
1/2 pkg. stuffing mix (Stove Top, etc.)

Add 1/3 cup melted butter ot stuffing; mix 1/2 of stuffing mixture to the above mixture. Use the rest to top the casserole. Bake at 350 degrees for 25 to 30 minutes. This can also be frozen. Take out when ready to use and bake.
