ZUCCHINI CASSEROLE 
6 c. cubed zucchini
1/4 c. chopped onions
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots
1/2 c. melted butter
1 (8 oz.) pkg. Pepperidge Farms herb stuffing mix

Cook zucchini and onion in water for 5 minutes. Then drain. Mix soup, sour cream and carrots with cooked zucchini. Mix melted butter with herb stuffing mix. Spread 1/2 stuffing mix in 12 x 7 x 2 inch dish. Add zucchini and top with remaining stuffing mix. Bake 25 to 30 minute at 350 degrees or until tender.
