CUCUMBER RELISH 
12 lg. cucumbers
4 lg. onions
2 green peppers
2 hot red peppers
2 lg. ribs celery
3 c. cider vinegar
3 c. granulated sugar
1/2 tsp. turmeric powder
1 tsp. celery seed
1 tsp. white mustard seed

Do not peel cucumbers. If seeds are too large, remove, but if they are small, leave them in. Put vegetables through a food chopper. Mix and sprinkle with a handful of salt. Let stand overnight. In the morning, drain.

Add remaining ingredients to the vegetable and boil for 30 minutes. Put into sterilized jars and seal. Makes about six pints.
