SOUTHERN CUCUMBER RELISH 
1 gallon cucumbers, shredded
8 sm. onions, shredded
1/2 c. salt
Ice water
5 c. vinegar
6 c. sugar
1 1/2 tsp. turmeric
2 tbsp. mustard seed
2 tbsp. celery seed

Wash and shred vegetables in processor. Place them in a large pan with the salt and pour enough ice water over them to completely cover. Allow to stand for 3 hours then drain.

Mix remaining ingredients together and bring to a boil. Add cucumbers and onions and allow to come to a boil again. Put into hot jars and seal. Process in boiling water bath for 10 minutes. Makes 4 pints.
