CUCUMBER RELISH 
4 c. thinly sliced cucumber
1 sliced onion
1 green pepper

Sprinkle ingredients with 2 tablespoons (non-iodized) pickling salt; let set 2 hours and drain. To drained juice, add: 2 c. sugar 2 tbsp. celery seed

Stir until sugar dissolves. Let set in refrigerator. Cucumbers need not be peeled; will keep for one year. Yield: Double batch makes one gallon.
