RAW APPLE CAKE WITH CREAM CHEESE
ICING
 
4 c. grated apples
2 c. sugar, divided
2 eggs, beaten
1/2 c. salad oil
2 tsp. vanilla
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. nuts

ICING:

3 tbsp. butter
6 oz. cream cheese
1 tsp. vanilla
1/2 tsp. salt
1 1/2 c. powdered sugar

Peel, core and grate 4 cups of apples. Let apples stand with 1 cup sugar on them. Beat 2 eggs with remaining 1 cup sugar, oil and vanilla. Add flour, baking soda, cinnamon and salt. Add apples and nuts to egg mixture. Bake at 350 degrees for 45 minutes in 9"x13" greased and floured pan.

Mix butter, cream cheese, vanilla and salt together. Gradually, add powdered sugar. Spread on cooled apple cake.
