FRESH APPLE CAKE WITH MOCK
CARAMEL ICING
 
1 1/4 c. corn oil
2 c. sugar
3 eggs, well beaten
3 c. chopped apples
1 c. chopped pecans
3 c. flour
1 tsp. baking soda
1/2 tsp. salt

ICING:

1/2 c. (1 stick) butter
2 c. brown sugar
1 sm. can evaporated milk
2 tsp. vanilla
1 c. chopped pecans
1 c. shredded coconut

Preheat oven to 300 degrees.

To prepare cake: Combine corn oil, and sugar; then add eggs. Add chopped apples and pecans. Sift together flour, baking soda, and salt. Add to apple mixture and stir well. Pour into three 8- or 9- inch baking pans. Bake at 300 degrees until done.
