ESCALLOPED CABBAGE 
6 c. chopped cabbage
1/4 c. butter
2 tbsp. flour
3/4 tsp. salt
Pepper to taste
3/4 c. milk
3/4 c. grated American cheese
1 1/3 c. soft bread crumbs

Parboil cabbage in 1 quart boiling water for 5 minutes and drain. Place in 9 inch square baking dish. Blend 3 tablespoons butter with flour in saucepan. Stir in salt, pepper and milk. Simmer for 5 minutes, stirring constantly. Remove from heat and stir in cheese until melted. Pour over cabbage.

Sprinkle with bread crumb mixture and remaining 1 tablespoon butter. Bake at 375 degrees for 20 minutes. (For a covered dish dinner double recipe and bake in a 9 x 13 x 2 inch pan).
