PAELLA 
1/4 c. olive oil
3 lb. broiler chicken
8 sausages
1 garlic clove minced
2 lg. sliced onions
1 (12 oz.) can whole tomatoes
1 (10 oz.) pkg. frozen peas
1/2 tsp. saffron
1/4 c. boiling water
1 c. uncooked white rice
1 lb. shelled and deveined shrimp
1 doz. clams
1 doz. mussels
1 can pimentos
1 tbsp. oregano
Salt and pepper

In large Dutch oven heat oil and saute cut-up chicken and sausages. Add garlic and onion; saute. Add tomatoes and salt; cover. Simmer 30 minutes.

Combine saffron and boiling water; add to chicken with rice and oregano. Stir; cover and simmer an additional 30 minutes. Add peas, shrimp, clams, and mussels. Cook 10 minutes or until done.
