TURKEY CACCIATORE 
1 lb. baked, boneless turkey strips
1/2 c. onion, chopped
2 tbsp. oil
1 (28 oz.) can tomatoes
1 (8 oz.) can tomato sauce
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
1 c. green peppers, diced
1 1/2 c. rice, cooked

(Chicken may be used).

Brown turkey (or chicken) and onion in the oil. Add tomatoes, tomato sauce, seasonings and green peppers. Bring to full boil. Stir in the rice. Cover, remove from heat. Let stand 5 minutes. Stir before serving. Makes 4 servings in about 25 minutes.
