FRIED RICE WITH CHICKEN & HAM 
3 c. cold, cooked rice
2 tbsp. oil
3 scallions, diced
1/2 c. cooked ham, diced
1/2 c. cooked chicken, diced
1/2 c. cooked green peas
2 eggs, lightly beaten with 1 tbsp. water
Salt & pepper to taste
1 tbsp. soy sauce

Break up cold rice with fork or fingers to separate. Heat oil in a skillet or wok, add scallions, chicken and fry while stirring for 1 minute, add rice, fry over fairly high heat while stirring until rice is well heated through. Stir in peas, fold in eggs and stir for a few seconds until eggs are nearly set. Remove from fire, stir in soy sauce and serve. Serve with tossed green salad.
