SPICY LONDON BROIL WITH EASY
"FRIED RICE"
 
1 1/3 c. precooked rice
1/2 c. chopped red pepper
4 green onions, cut in 1 1/2-inch diagonal slices
2 oz. mushrooms, sliced
1 c. chicken broth
3 tbsp. soy sauce
1/2 tsp. ground ginger
1 lb. flank steak
3 tbsp. prepared plum sauce
1/2 tsp. garlic powder

Place rice in medium bowl; set aside. In 10-inch skillet, heat 2 tablespoons salad oil. Saute vegetables until tender-crisp - about 3 minutes. Add broth, soy sauce and ginger; bring to boiling; stir into rice. Cover; let stand 5 minutes.

Brush each side of steak with half of plum sauce; sprinkle each side with 1/2 teaspoon salt, 1/4 teaspoon garlic powder and 1/8 teaspoon pepper. Broil 3 inches from heat for 3 minutes on each side. Makes 4 servings.
