CHOCOLATE TATER CAKE | |
4 oz. bar German chocolate 1 c. boiling water 1 1/4 c. sugar 1 tsp. salt 1/2 c. butter, softened 3 eggs 1 c. Hungry Jack potato flakes 1 1/2 c. flour 1 1/4 tsp. baking soda 1 tsp. vanilla 1/2 c. sour cream 1/2 c. chopped pecans Heat oven to 350 degrees. Spray Bundt or tube pan. Break chocolate in pieces in large mixing bowl. Add potato flakes and pour boiling water over. Stir, let set 5 minutes. Add flour and remaining ingredients. Blend until moist. Beat 3 minutes on medium speed. Stir in pecans. Bake 45 to 60 minutes. Cool in pan 30 minutes. Turn onto rack to cool. Glaze with 2 ounces melted chocolate, 2 tablespoons water, 1/2 cup powdered sugar and 1/2 teaspoon vanilla |
