POTATO CAKE #2 | |
1 c. butter 2 c. sugar 4 eggs 1 c. cold, mashed potatoes 1 tsp. baking soda 2 sq. chocolate, melted 2 c. unsifted Swans Down cake flour 1 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. cloves 1 tsp. nutmeg 1/2 tsp. salt 1 tsp. vanilla 1/2 c. raisins 1/2 c. nuts Cream butter and sugar well. Add egg yolks and beat; then the potatoes. Beat until fluffy. Mix and cream. Add flour and spice all at once and beat. Fold in melted chocolate and vanilla. Add 1/2 cup raisins and 1/2 cup nuts which have been floured. Last - the well beaten egg whites. Bake at 350 degrees for 25-30 minutes. Makes 2 layers and 1/2 dozen cupcakes or 3 layers. Frost with Caramel Icing. |
