CARAMEL FLAME | |
1 1/2 c. sugar Pinch of salt 1 tsp. vanilla 8 eggs 4 c. milk (scalded) Preheat oven to 350 degrees. Heat 1 cup sugar slowly in small heavy skillet. Stir with wooden spoon until sugar melts and turns caramel color. Pour syrup into 8-inch mold pan. In blender whip eggs (6 yolks, 2 complete eggs). Add scalded milk, sugar, salt and vanilla. Strain mixture carefully into pan in which you have cooled melted sugar. Place mold pan in larger pan filled with boiling water and bake for 50-60 minutes. Turn out on glass dish. Spoon caramel from bottom of pan on top. |
