Scoop generous servings of vanilla ice cream onto wax paper and roll inside the paper to form snowballs. Roll the balls in shredded coconut until the ice cream is completely covered. Store them in freezer until ready to serve.
Line sherbet glasses with fruits... such as canned peaches, cherries, or pineapple (my favorite)... or substitute cake, cookies or brownies.
Just before serving, soak sugar cubes in lemon or brandy extract. Place snowballs over fruits and insert a sugar cube in the top of each snowball. Light the sugar cubes and serve.
