ITALIAN STRUFOLI 
1 tbsp. sugar
1 tsp. grated lemon peel
1 tsp. vanilla extract
1/2 tsp. salt
4 eggs
2 1/2 c. all purpose flour
Salad oil
1 1/2 c. honey
Sprinkles
Cherries

In large bowl mix sugar, lemon peel, vanilla, salt, egg, and 2 cups flour. Flour board with remaining 1/2 cup flour. Knead dough with hands on lightly floured surface. Cut dough into 20 portions. Roll each portion into 9 inch long pencil-like sticks. Cut sticks into 1/2 inch pieces.

Heat about 1 1/2 to 2 inches salad oil to 375 degrees. Fry dough pieces, a handful at a time, until golden brown, about 5 minutes. Remove with slotted spoon onto paper toweling to drain.

Heat honey to boiling. Pour over fried dough and mix well. Add some cherries and sprinkles. Great for Christmas and Easter or anytime.
