MEAT LOAF SURPRISE 
2 lb. beef, pork & veal mix
1 c. uncooked rice
1 c. shredded Cheddar cheese
2 cans tomato soup, undiluted
2 eggs
1 c. bread crumbs
1 sm. chopped onion (optional)
Green pepper (optional)

In a large bowl, mix meat, eggs, uncooked rice, bread crumbs and 3/4 cup shredded Cheddar cheese. Add enough tomato soup to the mixture to make moist. Form meat mixture and place in an oven casserole dish.

Place remaining tomato soup over meat loaf. Bake at 350 degrees for about 1 1/2 hours or until done. Ten minutes before removing from oven sprinkle 1/4 cup remaining cheese on top of loaf so it melts.
