CORN BAKE 
1 pkg. Jiffy corn muffin mix
1 stick butter
1 green pepper
4 oz. Cheddar cheese
1 onion
1 lg. can corn
1 lg. can cream corn
2 eggs

Saute diced green pepper and diced onion in butter. Mix Jiffy muffin mix with the 2 eggs. Mix in butter, pepper, and onion, then drain corn. Add both cans of corn and stir. Put in 2 quart casserole dish. Sprinkle cheese on top and bake at 350 degrees for 45 minutes to 1 hour.
