SOUTH OF THE BORDER BAKE | |
2 pkgs. Jiffy corn muffin mix (sm.), made according to pkg. directions 1 1/2 lbs. ground beef 1/2 c. onion, chopped 2 cans nacho cheese soup 1 sm. can black olives, pitted & sliced (opt.) 1/2 lg. jar hot taco sauce (can use picante sauce instead) 1 c. shredded cheddar cheese Make muffin mix (don't cook). Set aside. In saucepan cook meat and onion; drain. Add nacho cheese soup, water, taco sauce, olives, and heat until bubbly; set aside. Grease a 13"x9" pan and spread half of corn muffin mixture in bottom. Pour hot meat mixture over top and then remainder of corn muffin mix on top. Bake in 350 degree oven, for about 30 minutes, remove from oven, spread cheese on top and return to oven until the cheese is melted. Serves 10. Serve with a dollop of sour cream on top (optional). If ever you have left overs this is great with chili on top. |
