SWEET POTATO SOUFFLE | |
2 c. cooked, mashed sweet potatoes 1/2 stick butter Pinch salt 1 tsp. vanilla 1/4 c. milk 2 eggs, beaten 1 c. sugar Mix mashed potatoes, butter and sugar. Add eggs; blend well. Add salt and vanilla until well blended. Add milk; mix well. Pour into a Pam sprayed casserole dish. Cover evenly with topping. Bake at 350 degrees until thickened and brown, approximately 30 minutes. TOPPING: 1 sm. can crushed pineapple 1/4 c. flour 1/2 c. sugar 1 egg, well beaten 1/2 stick butter, melted Mix and pour over top of sweet potato mixture. |
