EASY SWEET POTATO SOUFFLE | |
3 c. mashed, cooked sweet potatoes (about 2 lg. sweet potatoes, peeled) 1/4 c. brown sugar 3 tbsp. butter 4 eggs, beaten 1/4 c. light rum or orange juice 1/4 tsp. cinnamon Preheat oven to 350 degrees. Combine mashed sweet potatoes with rest of ingredients. Beat well by hand or with electric mixer. Fold into buttered 2- quart baking dish. Bake for 45 to 50 minutes or until a knife inserted into center comes out clean and top is firm and golden. |
