SUPERB SQUASH CASSEROLE 
1 lb. yellow or zucchini squash, sliced
1 1/2 c. shredded cheddar cheese
1/3 stick butter
1 egg
1/4 c. milk
8 Ritz type crackers
Salt & pepper

Boil squash in water until tender. Drain. Cut into small pieces or mash. Add cheese and butter. Add remaining ingredients. Stir. bake at 350 degrees for about 15 to 20 minutes until set, when clean knife comes out clean. NOTE: Versatile! Use any cheese, any crackers, either or both squashes mixed together.
