MEXICAN CHILAQUILES 
1 doz. corn tortillas
1 med. ripe tomato
1 med. onion
1/2 c. chopped jalapeno chili
1/4 c. cooking oil
White cheese grated, as desired

Cut tortillas into small pieces and add to heated oil in a medium size frying pan. Fry tortillas. In blender mix in 1/2 glass water with tomato, onion and jalapeno chili until it forms a soupy base. Then pour into fried tortillas, top with cheese. Ready to serve.
