CHILLED BLUEBERRY SOUP 
2 c. (16 oz.) chilled fresh clean blueberries (or frozen, thawed & drained)
3/4 c. chilled seedless red red or green grapes
3/4 c. chilled sour cream
2 tsp. fresh lemon juice
1/4 tsp. honey (or to taste)
1/2 c. chilled unflavored seltzer water

In a blender, puree the berries and grapes on high until smooth. On low speed, blend in the sour cream, lemon juice and honey. Pour into a bowl with seltzer water and gently stir. Garnish with whole, fresh berries, mint leaves and a dollop of sour cream. Serve immediately.
