CAULIFLOWER PUFF 
1 (10 oz.) pkg. frozen cauliflower
2 eggs, separated
2 tbsp. onion, finely chopped
1/2 c. grated Cheddar cheese
2 tbsp. milk
1/2 tsp. salt
Pepper to taste
2 tbsp. butter, melted
2 tbsp. Parmesan cheese, grated

Cook cauliflower until tender; drain. In blender, whirl the cauliflower, egg yolks, milk, salt and pepper. In medium bowl, beat the egg whites until stiff. Gradually fold in the cauliflower mixture, onion and Cheddar cheese. Spread over the bottom of buttered casserole dish. Drizzle with the butter. Sprinkle with Parmesan cheese. Bake at 375 degrees until golden brown and set, about 20 minutes. Makes 6 servings.
